Creamy coconut milk beef curry recipe

My creamy spiced coconut milk beef curry is the perfect midweek meal for you and your family. It is so quick and easy to prepare and does not lack in aromatic flavours. My Creamy coconut milk beef curry recipe will give your kitchen an amazing curry aroma and bonus points for tasting even better the next day. So make a big batch and put it in the fridge to have the next day. I added mushrooms to bulk up the curry and served it with brown rice and steamed baby marrows.

To make this beauty you will need

Ingredients

2 teaspoons of coconut oil
1 medium onion chopped
2 teaspoons paprika powder
2 teaspoons curry powder
350g beef stew meat cut into cubes
250g mushrooms
400ml coconut milk (Use the cream of the coconut milk only for this recipe, discard the water)
1 medium cup brown rice cooked per packet instructions (make a batch and freeze it, as it will save you lots of time)
4 baby marrows (Lightly steamed and sliced)

Method

Add coconut oil to a medium size pot over a medium heat. Add the onions and allow it to brown for 5 minutes.  Add the cubed beef meat, paprika and curry powder. Add a glass of water and allow it to cook for about 15 minutes until a thick gravy consistency is formed. Add the coconut milk and mushrooms and allow it to cook on a low heat for another 10-12 minutes. Add a pinch of salt and pepper to taste.  Add a portion of brown rice, beef curry and steamed baby marrows to your plate and Enjoy
