Green Goddess summer salad

Gosh I love food! My amazing Green Goddess summer salad is filled with lots of healthy ingredients like avocado, pomegranates, walnuts and cucumber. This salad is bursting with flavors and goodness, and paired with the most amazing dressing that is going to blow your mind. I used honey in the dressing to add natural sweetness and topped the salad with a handful of raw walnuts…another favorite of mine.



2 bags of mixed lettuce leaves (wild rocket, baby spinach, watercress leaves)
1/2 cucumber, sliced into long thin ribbons using a vegetable peeler
Pomegranates (Handful)
Walnuts (Handful)
150g black pepper feta cheese ( Roughly broken)
2 firm and ripe avocados, cubed
1/2 lemon

For the dressing

125ml balsamic vinegar
1 tsp honey
80ml extra virgin olive oil
Salt and pepper to taste



Put the salad leaves onto a large serving plate
Add pomegranates, walnuts, feta and avocado to the salad
Fold the ribbons of cucumber into a concertina shape and tuck in amongst the other salad ingredients
Squeeze some of the lemon juice over the avocado to prevent it from turning brown
Mix the dressing ingredients together and drizzle over the salad just before serving

    I come from a country whose cuisine does not mix green salad and avocado or walnuts. But since I really like food as well as experimenting with it, I might just prepare this extraordinarily looking salad. Cucumber is one of my favourite salad ingredients, so there are some plus points! Thank you for the recipe. 🙂

    The salad sounds delicious! I love the name because we have a great restaurant in New Orleans called Green Goddess. I like the idea of honey in a salad dressing. And feta is a perfect cheese for a salad.

    I am totally trying out this recipe! Healthy and yummy at the same time! I just might use alternatives for some ingredient because we dont have it here but I suppose it will just taste the same. Keep on sharing these kinds of recipe! 🙂

    Im a fan of greens, salads and everything in between! I love how this was easily done. Looks delish and Im sure I would finish this in one sitting for a very short period of time. Lol!

    I’m going to bookmark this recipe and try it out when we go back to Denmark. I can’t try it here in Manila yet because I can’t seem to find a supermarket that sells fresh pomegranate seeds. Pomegranates are cheap in Europe so it will be better for me to try it there. I hope you share more recipes in the future. I’ll probably replace the walnuts with toasted almonds. Let’s see!
