Paprika lentils and mushrooms with a refreshing yoghurt dressing are loaded with health benefits and so versatile and easy to make. This recipe is perfect to cook in a batch, freeze and eat during the week. It also taste amazing with this refreshing yogurt dressing that I made. The ingredients that I have used are so easy to find, and it certainly won’t break the bank.
Lentils are part of the legumes family, and are jam packed with goodness. Lentils are free from cholesterol and make a really good source of fibre. The fibre and protein in lentils are slowly digested which helps you stay fuller for longer.

Quick and easy to prepare
To make this beauty you will need the following
1 tablespoon coconut oil
1 medium sized onion sliced
2 cloves garlic crushed
1 teaspoon paprika powder
1 teaspoon turmeric powder
1 cup cooked lentils as per packet instructions
200g sliced mushrooms
To make the refreshing yoghurt dressing you will need the following
2- 3 tablespoons double cream plain yoghurt
1 cucumber grated and drained
Half freshly squeezed lemon
Method to make the paprika lentils and mushrooms
Add coconut oil to a medium size pot over a medium heat. Add the onions and allow it to cook until golden brown. Add the garlic, paprika, turmeric powder and a quarter cup of water. Allow this to simmer over a medium heat for about 5 minutes. Add the lentils and mushrooms and allow it to cook over a low heat for about 7- 10 minutes. Add a pinch of salt and pepper, and mix well together.
Method to make the refreshing yoghurt dressing
Add the yoghurt to a medium bowl. Next add the grated cucumber. Add freshly squeezed lemon juice. Mix well together and place in the fridge
Assemble: Add about 3 to 4 tablespoons of lentils and mushrooms to a plate. Drizzle with your yoghurt dressing. Add some freshly sliced avocado to your dish if you wish and enjoy!
